While most us think of cucumbers as vegetables, they are actually a fruit. They contain seeds and grow from the ovaries of flowering plants. They belong to the plant family Cucurbitaceae, which also includes squashes and melons.

What’s to love about cukes?

We love them because we can consume its peel and seeds which are its most nutrient-dense parts, without the worries of wax coating.

We love them because their benefits are beyond hydration. They are good sources of phytonutrients, which have antioxidant, anti-inflammatory and anti-cancer benefits. They are also high in fiber and beta-carotene that helps with immunity, and makes the skin and eyes glow even better.

Keep it Fresh:

Whole cucumbers will stay fresh and crunchy for about a week when properly stored. To do this, individually wrap them in paper towels or kitchen towels. Place them in a zip bag and store it in the fridge. Sliced cucumbers, on the other hand, will last just few days in the fridge.

Recipe Recommendation:
  • Jazz up water by adding slices of cucumber and lemon
  • Blend cucumbers alone or with other vegetables like carrots and celery, to make a post workout juice
  • Mix sliced cucumbers, tomatoes, olives, and feta cheese for a Greek-style side dish.
  • Chop cucumbers into cubes and include it in your curry dish
  • Slice cucumbers into big sticks and dip them in hummus
