Preserved calamansi is a great way to add instant calamansi brightness without the overwhelming sour punch and a salty umami due to fermentation.

Best used as toyomansi substitute, lemon zest substitue in grain salads and pasta, minced and mixed into dressings and sauces that need citrus flavor and aroma, and muddled in cocktails or soda water.
