Sesame Seeds by Ritual

Linga or sesame seeds (sesamum indicum) come from a plant with beautiful velvety leaves and white flowers, the flowers give way to small rattling pods, which are laborious to harvest and split. These seeds are grown organically for local consumption in Sultan Kudarat. They are smaller, but characteristically “wild” in flavor, possessing a herbal nuance that is absent from commercial sesame seeds. Use as you would regular sesame seeds—in desserts, delicacies, or to season savory food.
