Unsweetened Cacao Tablea by Ritual

Cacao “beans” are fermented, dried, roasted, and ground. The resulting paste is molded and hardened into tablea, which may be used for baking or to make tsokolate, this one is our favorite one, very fatty and luscious, to make a thick cup of tsokolate, place three tableas in a saucepan with ¾ cup milk and ¼ cup water. Bring to a gentle boil, beat with a batidor. Sweeten as desired.
